With a dense and truly fudgey centre, these delicious cupcakes are every chocaholics dream cake! Made with chocolate, pecans and basic cupcake ingredients, these cupcakes are super easy to make. Just don't overbake them - they should be squashy!
- 120g dark chocolate
- 220g butter
- 125g plain flour
- 175g each caster sugar and brown sugar
- 4 eggs
- 225g finely chopped pecans
- 1 tsp. vanilla extract
Break the chocolate into pieces into a bowl along with the butter and suspend over a pan of simmering water. Melt down. Once smooth, leave to cool slightly. Preheat oven to 180C and line 2 muffin tins with 24 liners.
Sift the flour into another bowl and whisk in the sugar and brown sugar. Whisk in the eggs one at a time, making sure one egg is mixed before adding the next. Gradually fold in the chocolate mix and the vanilla, and when smooth, fold in the pecans. Divide between the prepared liners.
Bake for 25 minutes, or until the tops are shiny. No more!
