Perfect for when you're craving a chocolate fix, these mini choccy meringues are the ideal chocolatey dessert. Flavoured with cocoa powder and mini chocolate chips, they are incredibly yum. Crush over ice cream or eat as they are, warm and gooey from the oven.
- 3 egg whites
- 125g icing sugar
- 1 tsp. vanilla extract
- 1/8 tsp. cream of tartar
- 1 tbsp. unsweetened cocoa powder
- 50g mini chocolate chips
Whisk the egg whites with the cream of tartar until soft peaks form. Gradually add the sugar until stiff peaks form, whisking all the while. You shouldn't be able to feel any graininess in the mix. The mix should be glossy. Whisk in the vanilla.
Fold in the cocoa and chips. Drop the mix by the teaspoon onto a lined baking tray and bake for 15-20 minutes at 150C, or until golden on the outside and lightly gooey inside.
