Orange is a brilliant flavour to pair with chocolate as it helps to bring out the flavour of the chocolate and it also makes it a little bit sweeter. In this recipe, orange zest and melted chocolate help to make deliciously soft cupcakes.
- 250g plain flour
- 1 tsp. baking powder
- 110g caster sugar
- 100g butter
- 200ml milk
- Pinch of salt
- 1 tsp. each orange zest and vanilla extract
- 200g dark chocolate, melted, cooled slightly
Preheat oven to 180C and grease 18 cupcake liners.
Beat together the sugar and butter until pale and fluffy. Beat in the egg, then sift in the flour, baking powder and salt. Stir to combine. Add the milk, orange zest and vanilla and then fold in the chocolate. Divide between the prepared liners.
Bake the cupcakes for 15-20 minutes until they test done with a skewer. Leave to cool on a wire rack before icing.
