A traditional pudding is given a Christmassy makeover in this recipe - Christmas pud is used in the topping to give it a rich, spiced flavour. Perfect with some nutmeg custard.
- 150g Christmas pudding
- 3 sweet apples
- 60g butter
- 100g plain flour
- 2 tbsp. cranberry sauce
- 2 tbsp. brown sugar
Peel and core the apples. Thickly slice. Arrange half in a buttered pudding dish and spoon on half the cranberry sauce. Arrange the rest of the apples on top along with the rest of the cranberry sauce. Sprinkle with half the sugar.
Rub the butter into the flour until it resembles breadcrumbs. Crumble the pudding in and rub with your fingertips until it starts to break down. Sprinkle evenly over the fruit and then sprinkle with the rest of the sugar.
Bake at 180C for 40 minutes or until browned and golden and bubbling.
