Christmas Pudding in Cups recipe

Preparation Time: 30 minutes | Cooking Time: 3 hours

This super easy Christmas pudding is made using cup measurements - which means that it takes literally takes less than half an hour to prepare. It's nutty, fruity and delicious. Serve it with a yummy butterscotch or caramel sauce.

  • 1 cup each raisins, sultanas, self-raising flour, grated chilled butter, brown breadcrumbs, light brown sugar, mixed chopped nuts and milk
  • 1 egg
  • 1 tsp. each cinnamon and mixed spice
  • Extra nuts to decorate
  • Butter to grease

  1. Tip the raisins, sultanas, flour, butter, breadcrumbs, sugar and nuts into a large bowl. Whisk the egg into the milk and stir in, along with the cinnamon and mixed spice. Mix will be thick and lumpy.

  2. Grease a 1.5 litre pudding bowl with the butter and tip in the pudding mix. Cover with a double layer of foil with a pleat in the middle, tie in place with string, then steam for 2 1/2 hours, topping up if needed.

  3. Leave to sit for about half an hour, then invert onto a plate to serve. Decorate with extra nuts to serve.

If you don't want to use nuts, feel free to completely omit them. You could add a cup of something like dried cranberries or mixed peel instead if you prefer. Recipe serves 10.
