Give your Christmas pudding a deliciously crispy, creamy makeover with this simple strudel recipe. Christmas pudding is mixed with mascarpone and Irish cream liquor before being encased in buttery filo pastry. Perfect for boxing day!
- 250g Christmas pudding
- 250g mascarpone cheese
- 3 tbsp. Irish cream liquor
- 4 sheets filo pastry
- 30g melted butter
- 2 tbsp. icing sugar
- Chocolate chips
Crumble the Christmas pudding into a bowl and mix with the mascarpone and Irish cream. Add chocolate chips to taste.
Lay one of the sheets of filo onto a large, flat baking tray and liberally brush with butter. Keep the other sheets of filo underneath a damp tea towel whist you're working. Keep going, laying filo and butter, ending on a decent layer of brushed butter to keep the pastry moist and buttery.
Place the filling the centre of the pastry and pat it into a log shape so that it runs the length of the pastry. Roll up so that the filling is completely enclosed and tuck the pastry in at either end. Brush with any spare butter.
Bake for 20-25 minutes or until the pastry is golden and flaking.
To serve, cool slightly, then dust with icing sugar.
