This pud is a little bit like bread pudding, but made with stollen instead! Stollen is soaked in a combination of double cream, milk, eggs and spices, then baked until set and wobbly. It's comforting and delicious, perfect for enjoying after a festive dinner.
- 750g stollen, cubed
- 300ml double cream
- 300ml milk
- 2 eggs
- 75g caster sugar
- 1/2 tsp. each mixed spice and cinnamon
Whisk the double cream, milk, eggs, sugar, mixed spice and cinnamon together. Spread the cubed stollen into a greased pudding dish.
Preheat the oven to 160C. Pour the custard mix over the stollen. Bake for 45 minutes or until slightly risen and firm to the touch. Serve warm from the oven.
