Cinnabuns in the Bread Machine recipe

The dough for these delicious cinnamon flavoured sweet buns is made in the bread machine, before being shaped and baked in the oven then drizzled with a delicious cream cheese icing.


  • 600g bread flour
  • 250ml warm milk
  • 75g butter, melted
  • 2 eggs at room temp
  • 100g caster sugar
  • 2 1/2 tsp. quick yeast
  • 1 tsp. salt
  • 225g dark brown soft sugar
  • 2 1/2 tbsp. ground cinnamon
  • 75g butter
  • 200g icing sugar
  • 100g cream cheese
  • 50g butter
  • 1/2 tsp. vanilla
  • 1/8 tsp. salt


  1. Put flour, milk, butter, eggs, sugar, yeast and salt into the bread machine in the order recommended by the manufacturer. Select Dough cycle. Once the dough doubles in size, turn out onto a floured worktop, cover and rest for 10 minutes.

  2. Combine sugar and cinnamon. Roll dough out to 40x50cm rectangle. Spread with 75g butter, then sprinkle evenly with the cinnamon sugar. Roll the dough up into a "swiss roll", then cut into 12 slices and arrange in a greased 23x33cm baking tin. Cover and leave to rise until nearly doubled in size, around half an hour, then bake at 200C for 15 minutes or until golden brown.

  3. Make the icing by beating together the icing sugar, cream cheese, butter, vanilla and salt. When the buns are still warm, drizzle with the icing. Serve warm from the oven.

For Christmassy cinnabuns, add a touch of mixed spice to the filling. Recipe makes 12 rolls.
