Citrus Trout recipe

This zingy trout recipe is perfect for serving as a quick dinner for all the family. Prepare the trout and marinade in the morning before you go to work, then all you need to do is grill the trout when you’re ready to cook it. Serve it with some grilled vegetables and a citrus dressing to mimic the flavours in the marinade.


  • 4 trout, scaled and boned
  • 1 lemon
  • 1 lime
  • 1 red onion
  • Handful fresh parsley
  • 125ml orange juice
  • Salt and pepper
  • 2 garlic cloves
  • Olive oil


  1. Slice the lemon and the lime thinly. Finely slice the red onion. Finely chop the parsley. Crush the garlic cloves.

  2. Place the fish in a dish along with the lemon, lime, onion, parsley, orange juice, garlic cloves and salt and pepper.

  3. Cover the dish and marinade until you’re ready to cook the fish.

  4. Heat the olive oil in a frying pan and cook the fish for 7-8 minutes on each side or until flaking and tender.

This trout is delicious warm from the pan, but it’s also tasty when cold, too. This recipe serves four people.
