Stack these pancakes high with strips of crispy fried bacon and a good drizzle of maple syrup for a yummy American-style breakfast.
- 100g self-raising flour
- 4 tbsp. caster sugar
- 2 large eggs, separated
- 5 tbsp. milk
- Pinch of salt
- 100g blueberries
Whisk together egg yolks and milk. Sift in the flour, sugar and salt and stir to combine.
Whisk the egg whites in a glass or metal bowl until soft peaks form, then gently fold into the flour mix, being careful not to knock the air out. Gently whisk in the blueberries.
Heat oil or butter in a large frying pan. Drop 2 tbsp. of the batter into the frying pan, cook for 2 minutes, then flip and cook for another minute or until golden on the other side.
