Coconut Cookie Snowballs recipe

Preparation Time: 10 minutes | Cooking Time: 20 minutes

Perfect for Christmas (or for any time of the year!) these yummy coconut cookie snowballs are soft, squidgy and delicious. They resemble tiny snowballs, and kids and grownups alike will love them!


  • 425g plain flour
  • 325g butter
  • 200g desiccated coconut
  • 150g icing sugar
  • 2 tsp. vanilla extract
  • 1/4 tsp. each grated nutmeg and salt


  1. Preheat oven to 180C and line a baking tray with greaseproof paper.

  2. Melt the butter in a large saucepan. Once melted, sift in 75g of the icing sugar, and stir in the vanilla, nutmeg and salt until fully combined. While the butter is still warm, mix in the flour and coconut until you have a fairly smooth cookie batter.

  3. Roll into small balls, then place onto the baking tray. Bake for 10 minutes, or until set but not quite browned. While still warm, roll in icing sugar. Leave to cool, then roll in icing sugar again.

You can easily adapt these cookies. If you like, add white chocolate chips, or a hint of extra spice such as cinnamon or ginger. Recipe makes about 16 cookie balls.
