Coconut Mojito recipe

Preparation Time: 10 minutes

A yummy, thick, creamy mojito made with cream of coconut, rum, lime juice and fresh mint leaves - this is the ultimate summer drink! Serve alongside pineapple sorbet for a deliciously different summer dessert.


  • 2 handfuls ice cubes
  • Flesh of 3 small limes, skin removed, chopped
  • 200g cream of coconut
  • 2 tbsp. icing sugar
  • 100ml rum
  • 10 fresh mint leaves


1. Roughly chop the limes and the mint leaves. Place limes, coconut, icing sugar, rum and mint leaves into a blender and blitz until smooth. Add the ice, cover and blitz again until smooth.

If you like, you can use half coconut cream and half condensed milk for a thicker mojito. Recipe serves 2.
