Coconut and Orange Muffins recipe

Creamy, zingy, soft and sweet? Check. These coconut and orange muffins are bursting with sweet flavour and their soft texture means they'll be a hit with the whole family. They're completely vegan, too!


  • 200g plain flour
  • 100g caster sugar
  • 100g desiccated coconut
  • 50g chopped toasted almonds
  • 1 1/2 tsp. baking powder
  • 1 tsp. grated orange zest
  • 1/2 tsp. bicarb of soda
  • 1/2 tsp. salt
  • 175ml coconut milk
  • 4 tbsp. each orange juice and extra-virgin olive oil
  • 1 tsp. vanilla


  1. Preheat the oven to 200C and grease and line a 12-hole muffin tin.

  2. Mix together the dry ingredients in one bowl, after sifting: plain flour, caster sugar, coconut, almonds, baking powder, orange zest, bicarb and salt. Lightly whisk. In another bowl, whisk together the wet ingredients: coconut milk, orange juice, oil and vanilla. Pour the wet mix into the dry mix and lightly stir until you have a smooth batter.

  3. Divide the mix between the prepared muffin liners. Bake for 15-20 minutes or until tested down with a metal skewer.

Ice these with a simple water icing if you like, or spread them with a little marmalade. Alternatively, top with some sweetened coconut cream. Recipe serves 12.
