- 200g plain flour
- 100g caster sugar
- 100g desiccated coconut
- 50g chopped toasted almonds
- 1 1/2 tsp. baking powder
- 1 tsp. grated orange zest
- 1/2 tsp. bicarb of soda
- 1/2 tsp. salt
- 175ml coconut milk
- 4 tbsp. each orange juice and extra-virgin olive oil
- 1 tsp. vanilla
Preheat the oven to 200C and grease and line a 12-hole muffin tin.
Mix together the dry ingredients in one bowl, after sifting: plain flour, caster sugar, coconut, almonds, baking powder, orange zest, bicarb and salt. Lightly whisk. In another bowl, whisk together the wet ingredients: coconut milk, orange juice, oil and vanilla. Pour the wet mix into the dry mix and lightly stir until you have a smooth batter.
Divide the mix between the prepared muffin liners. Bake for 15-20 minutes or until tested down with a metal skewer.
