This super-traditional Brazilian seafood stew is made with prawns and coconut milk. It calls for annatto powder, which is available in special stores and online.
- 500g prawns, peeled and deveined
- 700ml coconut milk
- 3 tbsp. oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 green pepper, seeded and chopped
- 2 tomatoes, seeded and chopped
- 2 tsp. annatto powder
- Salt and pepper
- Small handful chopped coriander
Heat oil in a large saucepan. Add the onion and cook until soft and tender, then add the garlic, green pepper, tomatoes and coconut milk. Cook until just boiling.
Add annatto powder, salt, pepper and prawns. Cook for 5 minutes or until the prawns are tender and pink. To serve, sprinkle with coriander.
