Coconut Tea Loaf recipe

Preparation Time: 10 minutes | Cooking Time: 1 hours

A sweet, moreish tea loaf with a cakey, bready texture, this tea loaf is made with coconut milk and desiccated coconut for a strong and sweet coconut flavour. Serve with jam, chocolate spread or as it is with a cup of tea or coffee.

Ingredients

  • 200g plain flour
  • 100g caster sugar
  • 100g butter
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 1 tsp. vanilla
  • 125ml coconut milk
  • 75g desiccated coconut

Directions

  1. Preheat oven to 180C and grease and line a loaf tin.

  2. Sift together the flour, baking powder and salt and whisk in the desiccated coconut. In another bowl, beat the sugar and butter together until pale and fluffy. Whisk in the egg and when fully combined, beat in the vanilla and milk. Gradually add the wet mix to the dry mix until you have a smooth batter.

  3. Pour the mix into the prepared tin and bake for 1 hour or until springy and golden. Leave to cool for 10 minutes, then turn out onto a wire rack to cool completely.

If you like, try adding some chocolate chips, or a little lime or lemon zest for a burst of fresh flavour. Recipe serves 4.
