Coconut Waffles recipe

Preparation Time: 20 minutes | Cooking Time: 15 minutes

A delicious twist on a classic, these yummy waffles are made with desiccated coconut, keeping them sweet, light and fluffy. Serve them for breakfast or for dessert with a little yoghurt or a scoop of ice cream.


  • 250g plain flour
  • 100g desiccated coconut
  • 5 tsp. baking powder
  • 100g butter
  • 100g runny honey
  • 4 eggs
  • 1 tsp. vanilla extract
  • 125ml milk
  • 1/2 tsp. salt


  1. Sieve the flour into a bowl and stir in the desiccated coconut and baking powder. In another bowl, beat together the butter and honey until pale and fluffy. Add the egg yolks one by one, beating well after each addition. Whisk in the milk.

  2. In another bowl, beat the egg whites with the salt until stiff peaks form. Fold in the egg whites and the flour coconut mix one after the other, being careful not to knock the air out of the egg whites, until you have a smooth batter.

  3. Heat a waffle iron over a medium heat. Pour in the coconut batter and cook for 3-4 minutes, or until golden and crisp.

If you like, use fresh coconut instead of desiccated, and for extra flavour, use coconut milk instead of regular milk. Recipe serves 4.
