These coconut flavoured cupcakes are a wonderful birthday cupcake - a light coconut cupcake topped with coconut icing and white chocolate flakes. Perfect!
- 175g caster sugar
- 175g butter, unsalted
- 175g self-raising flour
- 30g dessicated coconut
- 3 eggs
- 125g butter, unsalted
- 250g icing sugar
- Coconut extract
- 100g white chocolate, grated
Grease 12 cupcake cases. Place onto a baking tray.
Beat together the caster sugar and butter until pale and fluffy. Beat in the eggs one at a time, adding a little flour if the mixture threatens to curdle.
Sift in the flour and stir to combine. Fold in the coconut. Divide the mixture between the prepared cupcake cases.
Bake the cupcakes for 20 minutes until golden brown or until a skewer inserted into the centre of a cupcake comes out clean. Leave to cool on a wire rack.
Make the icing by beating together the butter and icing sugar. Add the coconut extract drop by drop to taste. Use to ice the cupcakes. Garnish with the white chocolate.
