Coffee Jelly recipe

This is a great pud for all coffee lovers. Coffee combines with sugar, gelatine and water and is then set in the fridge - it's that simple! Serve with whipped cream or evaporated milk.

  • 500ml strong freshly brewed coffee
  • 4 tbsp. caster sugar
  • 2 tbsp. boiling water
  • 1 x 11.5g sachet powdered gelatine

  1. Dissolve the gelatine in a small bowl with the boiling water. Leave to sit whilst the mixture turns clear. Once clear and cooled slightly, pour into a saucepan with the coffee and sugar.

  2. Bring to the boil, then pour immediately into 4 serving dishes or one jelly mould.

To make mocha jelly, add 1 tbsp. unsweetened cocoa powder to the jelly mixture. Recipe serves 4.
