This is a great pud for all coffee lovers. Coffee combines with sugar, gelatine and water and is then set in the fridge - it's that simple! Serve with whipped cream or evaporated milk.
- 500ml strong freshly brewed coffee
- 4 tbsp. caster sugar
- 2 tbsp. boiling water
- 1 x 11.5g sachet powdered gelatine
Dissolve the gelatine in a small bowl with the boiling water. Leave to sit whilst the mixture turns clear. Once clear and cooled slightly, pour into a saucepan with the coffee and sugar.
Bring to the boil, then pour immediately into 4 serving dishes or one jelly mould.
