A simple way to prepare leftover turkey, this simple coronation turkey recipe uses ready-to-eat apricots and is the perfect sarnie filling. You could also double the quantities of mayo and yoghurt to make more of a sauce, then stir the turkey into pasta or rice.
- 300g shredded cooked turkey
- 4 spring onions
- 50g dried ready-to-eat apricots
- 75g mayonnaise
- 75g plain yoghurt
- 2 tbsp. curry paste
Chop the spring onions and chop the apricots.
Combine the onions and apricots with the turkey. Set to one side, then mix the curry paste into the yoghurt and mayonnaise.
Pour the curry mayo over the turkey mixture, stir well and then use in whichever way you choose.
