Cottage Cheese Nut Roast recipe

These nut roast is probably the simplest you'll ever make - and it only has 6 ingredients. Feel free to use a flavoured cottage cheese for extra flavour, although this recipe just calls for a plain cottage cheese.

Ingredients

  • 250g cottage cheese
  • 125g wholemeal breadcrumbs
  • 50g chopped nuts
  • 1 tbsp. wholegrain mustard
  • 2 eggs
  • 1 tsp. freshly ground black pepper

Directions

  1. Preheat the oven to 180C.

  2. Grease a loaf tin. Combine cottage cheese, breadcrumbs, nuts, mustard, eggs and pepper in a bowl.

  3. Press the mixture into the prepared loaf tin and cook for 40-45 minutes until golden brown and firm.

Once cooled slightly, slice the loaf into thick slices and serve. Serve with a gravy or tomato sauce for extra moisture and flavour.

Love this recipe, so easy and my husband who is not a vegetarian loves it. Tastes good next day warm or cold.
