Courgette, Mint and Halloumi Skewers recipe

Preparation Time: 30 minutes | Cooking Time: 10 minutes

Courgette and halloumi are marinated in lemon and mint, then grilled on skewers in this easy and delicious recipe. Serve as part of a BBQ spread.

Ingredients

  • 2 courgettes
  • 225g halloumi cheese
  • 2 tbsp. extra-virgin olive oil
  • Zest and juice of 1 lemon
  • Ssmall handful freshly chopped mint
  • 1/2 tsp. chilli powder

Directions

  1. Whisk together the olive oil, half the lemon juice, half the mint and the chilli. Cube the halloumi and thickly slice the courgettes. Add the halloumi and courgette to the oil mix, toss to coat, cover and leave to sit for 20 minutes.

  2. Thread the courgettes and halloumi onto soaked wooden skewers. Griddle for 3-4 minutes on either side or until the cheese is golden. Sprinkle with the rest of the mint and the lemon juice to serve.

If you like, omit the chilli powder and add a little parsley instead. You could add garlic, too. Recipe serves 3-4.
