This easy soup combines loads of delicious flavours – and all you need to do is stick everything in one pot and cook it together until tender. What could be easier?
- 1 shallot
- 1 kg courgettes
- 1 potato
- 2 cloves of garlic
- Handful of fresh coriander
- 1 tbsp. crème fraiche
- Salt and pepper
- Vegetable stock to cover
Peel and finely chop the shallot. Roughly chop the potato. Peel and slice the courgettes. Mince the garlic cloves. Finely chop the coriander.
Place the shallot, potato, courgettes, garlic cloves, half of the coriander and salt and pepper into a saucepan with just enough vegetable stock to cover them.
Bring the soup to a simmer and cook for around half an hour.
Blend the soup with a hand blender until smooth and creamy. Before serving, stir the crème fraiche and the remaining coriander through the soup.
