Couscous Fritters recipe

Preparation Time: 1 hours | Cooking Time: 10 minutes

A deliciously different way to cook couscous, in this recipe, couscous is tossed with feta, onions and tomatoes, then shaped into patties and chilled before being fried until golden and crisp. Serve with your favourite burger relish - onion chutney is particularly delicious.


  • 175g couscous
  • 200ml vegetable stock
  • 1 egg
  • 3 tbsp. breadcrumbs
  • 75g feta cheese
  • 75g sun-dried tomatoes
  • 4 spring onions
  • Oil
  • Salt and pepper


  1. Place couscous into a bowl and cover with stock. Cover and leave to sit until all of the stock has absorbed.

  2. Beat the egg. Dice the feta into cubes and chop the tomatoes. Thinly slice the spring onions. When the couscous is cooked, add the egg, breadcrumbs, feta, tomatoes, spring onions, salt and pepper and toss to combine. Press into 6 patties, pressing really firmly, then place onto a baking tray, cover and put into the fridge for an hour.

  3. To cook, heat oil in a frying pan and fry for 4-5 minutes either side until golden.

You could add some spice to the patties if you like, try adding some cumin and mixed spice to the veggie stock so that the couscous absorbs all of the flavour. Recipe serves 6.
