Crostini are crispy little slices of bread. They are usually topped with something, but you can use them as dippers too. This recipe combines a fresh salsa with fresh crab meat and some crispy crostinis - perfect for parties.
- 1 thin baguettes
- 1 tbsp. olive oil
- 250g fresh crab meat
- 100g cherry tomatoes
- Handful freshly chopped coriander
- 1 small red onion
- 2 tbsp. extra virgin olive oil
- Zest and juice of 1 lime
- Salt and pepper
Thinly slice the baguette into 20 slices, discarding the thick ends. Drizzle with 1 tbsp. oil. Grill under a hot grill for 2-3 minutes, then flip over and cook for another 1-2 minutes until golden all over.
Quarter the tomatoes. Finely chop the red onion. Combine the crab, tomatoes, coriander, red onion, olive oil, lime zest and juice and salt and pepper. Use to top the crostini.
