This is a really easy yet elegant dish that really shows off the flavour of fresh crab.
- 450g fresh crab meat
- 475g soured cream
- 75g butter
- 2 tbsp. tomato puree
- 2 tbsp. sherry
- 2 tbsp. grated Parmesan
Melt the butter over a low heat.
Add the crab and cook for a few minutes. Season to taste.
Add in the tomato puree and cook out for a few minutes, then add the sherry, soured cream and Parmesan. Stir well and keep on the heat, but don’t let the mixture boil.
Serve warm with warm crusty bread straight from the oven.
