A wonderfully fruity twist on traditional coleslaw, in this recipe, cabbage, carrot, apple, red onion, oranges and cranberries are tossed together with mayonnaise, salt, pepper and a little vinegar. This coleslaw is perfect for pairing with roasted white meats.
- 1 white cabbage
- 1 carrot
- 1 red onion
- 1 apple
- 2 oranges
- 100g cranberries
- 50g caster sugar
- 4 tbsp. mayonnaise
- 1 tbsp. white wine vinegar
- Salt and pepper
Finely shred the cabbage and discard the core. Thinly slice the carrot into matchsticks and thinly slice the onion into half moons. Peel, core and thinly slice the apple into matchsticks. Peel the oranges and remove the pith and then slice out the segments.
Toss together the cranberries and sugar and leave to sit for an hour.
Whisk together the mayo, vinegar, salt and pepper.
To serve, toss the cabbage, carrot, onion, apple and oranges. Pour over the dressing and toss to coat and then right before serving, fold in the cranberry mix.
