This warming soup is a delicious comfort food for a cold Winter's evening. This recipe yields 2 servings.
- 1 tbsp olive oil
- ½ onion, finely chopped
- 1 head broccoli, cut into florets
- Salt and black pepper
- 500ml vegetable stock
- 50ml double cream
- Toasted bagels, to serve with
In a small saucepan, heat the olive oil over low heat; add the chopped onion and fry until softened.
Add the broccoli florets, salt, pepper and stock; simmer for 5 minutes.
Stir in the cream. Using a hand blender, blend the soup until smooth.
Pour into bowl and serve with a warm toasted bagel or bread.
