Cream of Broccoli Soup recipe

This warming soup is a delicious comfort food for a cold Winter's evening. This recipe yields 2 servings.


  • 1 tbsp olive oil
  • ½ onion, finely chopped
  • 1 head broccoli, cut into florets
  • Salt and black pepper
  • 500ml vegetable stock
  • 50ml double cream
  • Toasted bagels, to serve with


  1. In a small saucepan, heat the olive oil over low heat; add the chopped onion and fry until softened.

  2. Add the broccoli florets, salt, pepper and stock; simmer for 5 minutes.

  3. Stir in the cream. Using a hand blender, blend the soup until smooth.

  4. Pour into bowl and serve with a warm toasted bagel or bread.
