This is a lovely easy pudding that’s similar in flavour to a traditional rice pudding. Try sprinkling with nutmeg and cinnamon for more flavour.
- 225g egg noodles, cooked and drained
- 475ml double cream
- 300g caster sugar
- 225g ricotta cheese
- 110g unsalted butter
- 12 eggs
- 1 litre milk
- 3 tsp. vanilla extract
- 1 tsp. anise extract
Preheat the oven to 150C/gas mark 2.
Grease and line a large baking dish.
Combine all of the ingredients in a large bowl.
Pour the mixture into the baking dish and cook for around 1 ¼ hours or until set.
