Creamy Cheesy Runner Beans recipe

Preparation Time: 10 minutes | Cooking Time: 10 minutes

Runner beans are served in a super simple cheesy sauce in this delicious recipe, made with double cream, parmesan cheese and a small pinch of nutmeg.

  • 450g runner beans, trimmed and sliced
  • 1 tbsp. butter
  • 4 tbsp. double cream
  • 2 tbsp. grated parmesan cheese
  • Pinch each fresh nutmeg and black pepper
  • 2 tbsp. grated parmesan cheese to serve

  1. Drop the beans into a pot of salted water. Cook for 5-6 minutes or until tender, then drain.

  2. Meanwhile, make the sauce. Melt the butter in a small saucepan. Whisk in the cream, 2 tbsp. cheese, nutmeg and pepper and bring to a very gentle simmer. Stir the beans into the sauce, return to a simmer, then serve with the rest of the cheese sprinkled over the top.

A great addition to this dish would be some smoked bacon lardons. Recipe serves 2.
