Runner beans are served in a super simple cheesy sauce in this delicious recipe, made with double cream, parmesan cheese and a small pinch of nutmeg.
- 450g runner beans, trimmed and sliced
- 1 tbsp. butter
- 4 tbsp. double cream
- 2 tbsp. grated parmesan cheese
- Pinch each fresh nutmeg and black pepper
- 2 tbsp. grated parmesan cheese to serve
Drop the beans into a pot of salted water. Cook for 5-6 minutes or until tender, then drain.
Meanwhile, make the sauce. Melt the butter in a small saucepan. Whisk in the cream, 2 tbsp. cheese, nutmeg and pepper and bring to a very gentle simmer. Stir the beans into the sauce, return to a simmer, then serve with the rest of the cheese sprinkled over the top.
