Creamy Coconut Rice recipe

Preparation Time: 10 minutes | Cooking Time: 20 minutes

A wonderful alternative to plain boiled rice, in this recipe, rice is cooked, then combined with coconut cream. Serve with a spicy curry.


  • 400g long-grain rice
  • 1/2 tsp. salt
  • 200g coconut cream


  1. Wash the rice really well under running water in a sieve.

  2. Bring 750ml water to the boil with the salt. When boiling, add the rice. Reduce heat slightly, cover and cook for 12-15 minutes or until the rice is just cooked and the water absorbed.

  3. Take the pan off the heat. Stir in the coconut cream, cover and leave to sit for a couple of minutes so that the rice can absorb the cream. Once absorbed, serve.

If you like, you could cook the rice in a mix of water and coconut milk for even more flavour. Recipe serves 6.
