A wonderful alternative to plain boiled rice, in this recipe, rice is cooked, then combined with coconut cream. Serve with a spicy curry.
- 400g long-grain rice
- 1/2 tsp. salt
- 200g coconut cream
Wash the rice really well under running water in a sieve.
Bring 750ml water to the boil with the salt. When boiling, add the rice. Reduce heat slightly, cover and cook for 12-15 minutes or until the rice is just cooked and the water absorbed.
Take the pan off the heat. Stir in the coconut cream, cover and leave to sit for a couple of minutes so that the rice can absorb the cream. Once absorbed, serve.
