Creamy Curry Vegetable Soup recipe

This simple soup is the perfect throw together meal when you haven't got much of anything in - a little curry powder, a bag of mixed frozen veg, an onion and some milk and you've got yourself a creamy curry vegetable soup.


  • 1 onion
  • 1 garlic clove
  • 1 tbsp. curry powder
  • 1 litre vegetable stock
  • 650g mixed frozen veg
  • 500ml milk
  • 2 tbsp. flour


  1. Dice the onion and mince the garlic clove. Fry in a little oil until golden and sweet and then add the curry powder. Cook until fragrant. Stir in the frozen veg and coat in the spices.

  2. Pour in the veg stock and simmer until the veggies are tender. Process with a hand blender until smooth and pass through a sieve if you like.

  3. Create a paste with the flour and milk. Keep adding milk a little bit at a time until the flour is dissolved. Pour into the soup, stir and simmer until the soup thickens.

If you like, you can use fresh veg or just one type of vegetable - whatever you have in the cupboard. Recipe serves 4-6.
