This tasty gammon pasta recipe is comfort food at it's best. It's a doddle to make but it yields spectacular results. Feel free to adjust the quantities of mushrooms and onion according to your tastes and add more black pepper depending on how much of a kick you like.
- 1 onion
- 150g mushrooms
- 650g penne pasta
- 300g double cream
- 2 tsp. tomato puree
- 1 garlic clove
- 2 smoked gammon steaks
- Black pepper
- 1 tbsp. olive oil
Finely chop the onion and mince the garlic cloves. Chop the gammon steaks into chunks. Slice the mushrooms
Heat the olive oil in a frying pan and cook the onions for around ten minutes. Add the gammon chunks and garlic and fry for another five minutes.
Put the pasta on to cook according to packet instructions.
Cook the mushrooms for five minutes with the gammon and onion and stir in the tomato puree. Add the double cream, bring to the boil and then reduce to a simmer until the pasta has cooked.
Toss the pasta in the sauce to serve and season well with black pepper.
