These yummy mashed potatoes are garlicky, creamy and cheesy - the perfect combination in my opinion! Serve with any rich meat dish or some good quality sausages.
- 4 medium potatoes
- 50g butter
- 50ml double cream
- 2 garlic cloves (roasted or crushed)
- 200g grated mature cheddar cheese
- Salt and pepper
Peel and chop the potatoes. Place into a pan of cold salted water. Bring to the boil, reduce to a simmer and cook for about 20-25 minutes until tender.
Drain the potatoes and leave to dry in a colander for a few minutes. Place back into the saucepan and add the cream. Mash until it reaches a creamy consistency.
Beat in the butter with a wooden spoon until it has melted, then stir in the cheese and garlic. Season to taste.
