This simple soup is made with a white sauce, onion, cooked tender lobster and some spice. Perfect for lunch or even as a simple dinner party starter, this is an easy peasy soup that everyone will enjoy.
- 450g cooked lobster, shredded
- 250ml chicken stock
- 1 onion
- 2 tbsp. butter
- 2 tbsp. plain flour
- 450ml milk
- Salt and pepper
- Dash of Worcestershire sauce
- Pinch of cayenne pepper to taste
- Pinch of paprika to taste
- Small handful freshly chopped parsley
Mince the onion. Melt the butter in a large pot and add the onion. Fry until softened and sweet, then stir in the flour. Keep stirring until you have a smooth mixture, cooking for 4-5 minutes. Heat the stock in another saucepan, then gradually whisk into the flour mix until you have a thick, smooth mixture.
Gradually whisk in the milk, but don't let the soup come to the boil. Add the lobster, salt, pepper, Worcestshire sauce, cayenne pepper and paprika and stir. Warm the lobster through, stir in the parsley and serve. The soup should be almost boiling, but not quite.
