An easy peasy dish that pulls together in a flash - pasta is tossed with cream cheese, garlic, broccoli and spicy chorizo to create a comforting pasta dish that the whole family will love.
- 400g pasta
- 200g low fat cream cheese
- 2 garlic cloves, minced
- 2 tbsp. freshly chopped parsley
- Salt and pepper
- 200g chorizo, diced
- 1 tsp. fennel seed
- Good handful grated parmesan
- 1 head broccoli
Slice the broccoli into florets. Cook pasta according to packet instructions in salted water, adding the pasta for the last 3-4 minutes. Drain and reserve some of the cooking water.
Dry fry the chorizo until it turns golden and starts to release oils. Add the garlic and fennel and fry for a minute or two until fragrant, then add the pasta and broccoli and toss to coat in the oils.
Add the cream cheese, parsley and the cooking water, then toss until the cream cheese melts over the pasta and forms a sauce. Sprinkle with parsley and parmesan to serve.
