These easy twist on a breakfast classic is the perfect way to ring in the weekend - serve with bacon and toast and lashings of cheese. Alternatively, serve with smoked salmon strips.
- 2 eggs
- 50g grated cheddar cheese
- 2 tsp. green pesto
- 2 tbsp. cream
- Black pepper to taste
- 1 tbsp. butter
Beat together the eggs, cream, cheese and black pepper. Pour into a saucepan.
Cook over a low heat, stirring regularly, until the eggs start to set on the bottom. When the eggs are about 40 seconds away from being cooked, take the pan off the heat.
Add the butter and pesto and with the pan off the heat, keep stirring until the eggs are creamy. Serve immediately.
