This is a fantastic lunch recipe - cooked pasta and prawns are tossed with fried bacon, avocado, mayo, lemon juice and cheese for a rich, well flavoured pasta salad dish perfect for serving to the whole family.
- 500g penne pasta
- 150g streaky smoked bacon
- 450g cooked prawns, ready to eat
- 2 avocados
- 100g cheddar cheese, grated
- 4 tbsp. lemon juice
- 150g light mayonnaise
- 2 spring onions
- 2 tomatoes
- Salt and pepper to taste
Cook the pasta according to packet instructions in boiling salted water. Drain.
Dice the bacon and fry in a dry frying pan until crisp. Drain of excess fat on kitchen paper. Thinly slice the spring onions and dice the tomatoes. Slice the avocados in half and remove the stones. Scoop out the flesh using a teaspoon.
Toss the pasta, bacon, prawns, avocados, cheese, lemon juice, mayo, spring onions, tomatoes and salt and pepper to taste. Serve cool.
