In this recipe, prawns are simmered in an easy soup base made with condensed soup, onions, sweetcorn and stock. Perfect for lunch or for a dinner party starter, this is one simple yet delicious soup.
- 450g medium prawns, peeled and deveined
- 1 x 300g tin cream of chicken condensed soup
- 1 x 300g tin cream of celery condensed soup
- 450g sweetcorn, drained
- 300ml chicken stock
- 1 onion
- 1 tbsp. butter and oil
- 1/2 tsp. each dried thyme and oregano
- Salt and pepper
- Nutmeg to taste
Finely dice the onion. Heat butter and oil in a large saucepan. Add the onion and fry until soft and sweet, then add the chicken soup, celery soup, sweetcorn, chicken stock, a dash of milk to thin, thyme, oregano and salt and pepper. Bring to a simmer.
Add the prawns and sweetcorn and simmer for 5-10 minutes until the prawns and sweetcorn are tender.
Before serving, season with nutmeg and more salt and pepper to taste.
