Creole Prawns recipe

Preparation Time: 20 minutes | Cooking Time: 30 minutes

This spicy prawn dish is a little like a tomato prawn stew. Prawns are cooked in a tomato sauce enriched with okra, sweetcorn, red and green peppers, garlic and plenty of chilli. It's really flavourful but is pretty healthy. Serve with potato wedges.


  • 450g fresh prawns, deveined, peeled and cleaned
  • 1 red pepper
  • 1 green pepper
  • 4 tbsp. butter + 2 tbsp. oil
  • 3 medium onions
  • 3 garlic cloves
  • 1 tsp. dried red chilli flakes
  • 1/2 tsp. dried thyme
  • 1 bay leaf
  • 1 whole red chilli
  • 175g sweetcorn
  • 100g okra
  • 400g tin chopped tomatoes
  • 2 tbsp. tomato puree
  • Salt and pepper
  • Juice of 1 lime


  1. Slice the peppers in half, remove the seeds and pith and finely dice the flesh. Finely dice the onions. Mince the garlic cloves. Chop the okra. Toss the prawns in lime juice and a little salt and pepper.

  2. Heat butter and oil in a large heavy saucepan. Add the onion and fry until soft and sweet, around 5 minutes. Add the garlic and fry for 1-2 minutes, then add the red pepper and green pepper and fry for 1-2 minutes more. Add the tomato puree and cook for 2-3 minutes, then add the red chilli flakes, thyme, bay leaf and whole chilli. Stir to combine and cook for 1-2 minutes, then stir in the chopped tomatoes, okra and sweetcorn. Season with salt and pepper.

  3. Simmer the mixture for 15 minutes, until thick and flavourful. Add the prawns along with the lime juice, stir and simmer for another 5 minutes until pink, then serve. Remove the bay leaf before serving.

If you're not a fan of okra, plump out the dish by adding more chopped onion, or chopped carrots and celery stalks. Recipe serves 4.
