These sweet potato fries are sweet potato fries with a difference - they are super crispy, not soggy, and have a wonderfully soft texture on the inside. Season them as you like, with cinnamon and brown sugar for sweet fries or paprika, salt and pepper for savoury fries.
- 4 large sweet potatoes
- 2 tbsp. corn starch
- 2 tbsp. olive oil
Peel the potatoes and chop into chunky chips. Place into a bowl of water. Leave to soak for an hour or up to 6 hours.
Drain the fries and pat dry.
Tip the corn starch into a freezer bag. Add the potato fries and shake to lightly coat them in the cornstarch. Tip the potatoes onto baking trays, shaking to remove excess cornstarch.
Drizzle the fries with oil and toss with your hands to coat. Bake in a 170C oven for 15 minutes, then flip over and cook for another 5-10 minutes if needed. Season with your choice of flavours whilst the fries are hot from the oven.
