Crumbly Blueberry Traybake recipe

Preparation Time: 20 minutes | Cooking Time: 40 minutes

A crumbly dough is topped with sugared blueberries and more crumble to create a simple yet very effective traybake. Slice into squares and serve in lunchboxes or serve warm from the oven with custard.


  • 375g plain flour
  • 200g caster sugar
  • 200g butter
  • 1 egg
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. cinnamon
  • 600g blueberries
  • 100g caster sugar
  • 1 tbsp. corn flour


  1. Preheat oven to 190C and grease a 20x30cm baking dish.

  2. Whisk together flour, sugar, baking powder, salt and cinnamon. Cube the butter and use a pastry cutter or two forks to cut into the flour along with the egg. Keep going until the mix forms breadcrumbs. Press half into the baking dish.

  3. Mix blueberries, cornflour and sugar and scatter over the base. Press the rest of the dough over the blueberries. Bake for 40 minutes or until the top is golden and delicious.

You can omit the cinnamon if you like or add some ginger, nutmeg or mixed spiced instead. Recipe serves 8.
