This easy peasy soup combines some classic flavours - leeks and potatoes, with apple for added sweetness and a touch of curry for a little bit of extra spice. Perfect for warming your bones on a cool winter's day.
- 4 leeks
- 2 potatoes
- 2 eating apples
- 750ml vegetable stock
- 2 tsp. curry powder
- 1 tbsp. butter and 1 tbsp. oil
- Salt and pepper
Peel, core and dice the apples. Dice the potatoes and slice the leeks.
Heat the butter and oil together and add the leeks, potatoes and apples and fry together for about five minutes. Add the curry powder and fry until fragrant. Add the veg stock and simmer for 20-30 minutes or until tender.
Use a hand blender to whiz the soup until smooth. Season to taste with salt and pepper.
