Double Chocolate Walnut Brownies recipe

Preparation Time: 20 minutes | Cooking Time: 35 minutes

These dense, squishy brownies are wonderfully moreish. Made with brown sugar, melted chocolate and chocolate chips, and plenty of walnuts, these brownies make a brilliant pud but they're also great served mid-afternoon with a cup of coffee.

  • 150g brown sugar
  • 150g caster sugar
  • 225g butter
  • 110g milk chocolate
  • 3 eggs
  • 1 tsp. vanilla extract
  • 125g plain flour
  • 175g chopped walnuts
  • 175g chocolate chips

  1. Chop the milk chocolate into chunks. Put into a bowl with the butter and melt over a pan of barely simmering water. Stir together, then leave to cool to room temperature.

  2. Preheat the oven to 180C. Beat the sugars into the chocolate, then beat in the eggs one at a time. Stir in the vanilla, then stir in the flour. Fold in 2/3 of the walnuts and 1/2 of the chocolate chips. Pour into a greased 20x30 cake tin.

  3. Combine the rest of the walnuts and chocolate chips, then sprinkle evenly over the top of the brownie mix. Bake for 35 minutes or until the top springs back once pressed with your finger.

Serve these brownies warm from the oven with some ice cream as a dessert, or with plenty of chocolate sauce. Recipe serves 6-8.
