Double Nut Chocolate Muffins recipe

Preparation Time: 20 minutes | Cooking Time: 25 minutes

These double nutty - and double chocolate - muffins, are packed with flavour and have a lovely soft, squishy texture with a bit of a crunch. They're really yum!


  • 250g plain flour
  • 50g unsweetened cocoa powder
  • 300g caster sugar
  • 300ml milk
  • 2 tsp. baking powder
  • 1/2 tsp. bicarbonate of soda
  • 1/4 tsp. salt
  • 1 egg
  • 2 tbsp. veg oil
  • 1 tsp. vanilla extract
  • 175g chocolate chips
  • 75g chopped walnuts
  • 50g whole almonds
  • 4 tbsp. brown sugar


  1. Preheat the oven to 180C and grease or line a 12-hole muffin tin.

  2. In a bowl, combine the flour, cocoa powder, sugar, baking powder, bicarbonate of soda and salt. In another, whisk the milk, egg, veg oil and vanilla. Pour the wet mix into the dry mix and stir until just combined, then fold in the chocolate chips, walnuts and almonds.

  3. Divide the batter between the muffin liners then evenly sprinkle with the brown sugar. Bake for 20-25 minutes until tested done with a skewer.

If you like, add a touch of spice to the batter - cinnamon is really lovely with chocolate. Recipe makes 12.
