Dried Blueberry and Pecan Oat Biscuits recipe

Preparation Time: 2 hours | Cooking Time: 15 minutes

These dried blueberry and pecan oaty biscuits have a wonderful crumbly texture and taste a little like flapjacks. Serve them for breakfast or warm straight from the oven.


  • 175g plain flour
  • 100g brown sugar
  • 75g golden caster sugar
  • 85g porridge oats
  • 140g butter
  • 75g dried blueberries
  • 60g pecans, chopped
  • 1 egg
  • 1 tsp. vanilla extract


  1. Tip flour, sugar, caster sugar and oats into a bowl. Cut the butter in using pastry cutters or two forks, then stir in the egg and vanilla and fold in the pecans. Turn out onto a floured work surface, shape into a 6cm thick log and wrap tightly in cling wrap. Chill for an hour or two.

  2. Slice the log thickly, then arrange the biccies on baking trays and bake at 160C for 10-15 minutes or until golden and just crisping up. If cooling, put onto wire racks to cool completely.

For extra sweetness, add some white chocolate chips. Recipe makes 12 large cookies.
