This recipe doesn't create scones as you know them - these lovely little pancakes are also called Scotch pancakes.
- 125g self-raising flour
- 150ml milk
- 1 egg
- 2 tsp. caster sugar
- 1 tbsp. melted butter
- 4 tsp. vegetable oil
Put the flour into a bowl and stir in the sugar. Create a well in the centre of the flour.
Pour in the egg, melted butter and a little bit of milk.
Stir the flour into the well in the centre and then add in the rest of the milk a little bit at a time. Keep stirring until you have a smooth batter.
Heat the oil in a frying pan.
Using a desert spoon, drop batter into the pan to create pancakes.
Fry them for 1-2 minutes on each side. They should be golden brown.
