Dense and chewy, these easy peasy banana muffins are soft, squidgy and lovely and sweet - great for making with the kids after school.
- 200g plain flour
- 1 tsp. bicarbonate of soda + 1/2 tsp. baking powder
- 1/2 tsp. salt
- 150g caster sugar
- 3 large bananas, ripe, mashed
- 1 egg
- 75g butter, melted
- 1/2 tsp. vanilla extract
Preheat the oven to 180C and line a 12-hole muffin tin with 12 liners.
Combine the mashed bananas, sugar, egg, butter and vanilla in a large bowl until fairly smoth. Sift in the flour, bicarb, baking powder and salt and stir to combine. Divide between the muffin liners, then bake for 25-30 minutes or until just golden and risen.
