Easy Banana Muffins recipe

Preparation Time: 20 minutes | Cooking Time: 30 minutes

Dense and chewy, these easy peasy banana muffins are soft, squidgy and lovely and sweet - great for making with the kids after school.


  • 200g plain flour
  • 1 tsp. bicarbonate of soda + 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 150g caster sugar
  • 3 large bananas, ripe, mashed
  • 1 egg
  • 75g butter, melted
  • 1/2 tsp. vanilla extract


  1. Preheat the oven to 180C and line a 12-hole muffin tin with 12 liners.

  2. Combine the mashed bananas, sugar, egg, butter and vanilla in a large bowl until fairly smoth. Sift in the flour, bicarb, baking powder and salt and stir to combine. Divide between the muffin liners, then bake for 25-30 minutes or until just golden and risen.

If you like, spread a thick and sweet dulce de leche onto the tp of these muffins for a real treat. Recipe makes 12.
