Blueberry muffins are a real treat and in this recipe, fresh blueberries are baked into a classic muffin batter. The blueberries will pop in your mouth. Mmm! Perfect for lunchboxes or for afternoon tea.
- 200g plain flour
- 150g fresh blueberries
- 150g caster sugar
- 1 egg
- 1 tbsp. oil
- 110ml milk
- 2 tbsp. melted butter
- 1 dstsp. baking powder
- Pinch salt
Preheat oven to 200C and line a muffin tin with 12 muffin liners.
Sprinkle 4 tbsp. of the flour onto the blueberries and set to one side.
Whisk egg, oil, milk and butter together and sift together flour, baking powder and salt. Stir in the sugar. Gradually add the wet mix to the dry mix and stir until just combined, then fold in the blueberries.
Divide between the muffin liners and bake for 20-25 minutes or until golden and risen.
