Pasta, cheese and mangetout - what more could you ask for? This is a simple yet delicious family meal that is just perfect for midweek.
- 225g pasta shapes of choice
- 200g mangetout
- 25g butter
- 75g cream cheese, softened
- 50g soft blue cheese, such as gorgonzola, crumbled
- Salt and pepper
- 2 tbsp. double cream
Cook the pasta according to packet instructions in boiling water. Add the mangetout for the last minute or two of cooking. Drain, reserving 2-3 tbsp. cooking water, then toss in butter.
Combine cream cheese, blue cheese, cream, salt and pepper in a large bowl. Heat gently until all ingredients are melted together, then pour over the pasta with the cooking water and toss to combine.
