These yummy muffins are packed with grated courgettes and flavoured with apple and orange, then topped with the easiest cream cheese icing you'll ever make.
- 300g self-raising flour
- 100g golden caster sugar
- 75g butter, melted
- 1 egg
- 1 apple, grated
- Juice of 1 orange
- 50g courgette, grated, water squeezed out
- 1/2 tsp. each baking powder and cinnamon
- 1 handful sultanas or chocolate chips
- 200g soft cream cheese beaten with 4 tbsp. icing sugar and a pinch of cinnamon
Preheat the oven to 170C then grease or line a 12-hole muffin tin.
Sift the flour into a large bowl and stir in the sugar, baking powder and cinnamon. In a bowl, whisk the butter, egg, apple, orange juice and courgette. Gently stir the wet mix into the dry mix until moistened then fold in the sultanas. Divide between the liners, then bake for 20 minutes or until risen.
Cool, then ice.
